I am a sucker for traditional South Indian snack items. And by sucker I mean not in eating it but to make it. The first time I tried Omapodi at home, it drank so much oil that I had to bin it. The second time I tried seedai and most of you know what happened. And to those who are new, it burst right out spluttering my entire kitchen with oil and it took me 2 hours to clean up the mess. And thus come everything to an end. The huss, the brother, and the whole family asked me to stop venturing out of my league. And so have I. Until Diwali came and I started browsing for some easy recipes. The huss was so adamant that I make the muruku under his vigilance. Grrrrr... As for the recipe, I saw this one in a TV cookery show. ~*What U Need*~
Unbleached all purpose flour - 1 cup
Cumin seeds - 1/2 tsp
Sesame seeds - 1/2 tbsp
Ghee - 1 tsp
Salt - to taste
Warm water - to knead dough
Oil - to deep fry

How I Made it:
Place the maida in a clean cloth and steam for 10 mins. Once done, remove and when it is warm, crumble it with your hand. Once it is completely cool, sieve it and collect the flour. If you want you can run it in the food processor or mixie once.

In a mixing bowl, add maida, ghee, sesame seeds, cumin seeds, required salt and mix it once. Then add hot water little by little and combine to form a dough. Then divide them equal portions and set aside. Put each ball into the murukku press. Heat oil in a kadai and when hot drop murukkus (you could either pipe it directly into the hot oil or pipe murukku on a greased plastic cover and drop it carefully into the oil. I piped it directly into the oil. Cook on both side till golden brown, remove and drain in kitchen towl. Crush into bite sized pieces and store in an airtight container. Always fry the murukku in medium low flame.

Today i'm sharing my 7th guest post for one of my dear blogger friend Karthi from Sumanarthy's Kitchen. We came to know about each other through Facebook and i still can't believe we have known each other for past one year. How soon the time flies by. I always liked her non-veg recipes which resembles my style of cooking. When she asked for a guest post, i was all excited. I took some time and finally came up with the idea of preparing my fav indian sweet "Ladoo" </div>

<li style="margin-left: 15px;">Dry roast bajra flour on low flame till nice aroma comes. Remove from the heat and allow to cool.</li>
<li style="margin-left: 15px;">Grind crumbled paneer in a mixie until smooth. Transfer it to a bowl. Combine jaggery and ¼ cup water in a pan or kadhai. Once it melts down completely, remove from the heat and strain it to remove impurities. Pour it back to pan and switch the flame to low. </li>

In a pan, heat oil and add ginger garlic paste fry for a while then add sliced onion and fry until translucent. Now add in red chilli powder, coriander powder, turmeric powder and fry until fragrant, then add in garam masala and fry until oil separates. Next pour water and let the masala simmer and thickens. Finally add in salt and eggs, let the eggs absorb the masala. Now our dish is ready to be served.</div>

During my childhood I don't prefer having fish whether fried, in curry or done anyway except for sharkfish, string ray or pomfret, not because of anything but I'm scared of the tiny bones in it, I was a very fussy eater and tortures mom so much. I have been choked many times, how careful I eat also I end up choking and will vomit the whole day to remove the bones. </div>

When I went to study in university, I never ever eat fish as I feel its not prepared hygienically and the fishy smell kills me. So those days, I used to crave for mom's fish dishes and during every semester break I go back I will request mom to make fish dishes for me. All the dishes mom makes I used to crave for, mom will be so happily cook for me as I changed from a fussy eater to anything mom cooks I will eat.</div>

Okay now coming back to our post today, I made Fish Nugget from the Dory fillet that I bought few days ago. I was thinking what to make and end up making nuggets but I cut into bigger chunks. You can cut into the size you prefer.</div>

Mix multi purpose flour with black pepper and keep it aside, the flour contains salt so I didn't add any extra salt. Cut fish and dry it with paper towels and dip it into beaten egg, next dip it into flour, remove excess flour and fry it in hot oil until its golden brown. </div>

2 1/2 cups of water (ratio depending on the rice you use)<br />
1 large onion (chopped)<br />
1 tbsp of ginger garlic paste<br />
1 tbsp of tandoori powder<br />
A bunch of coriander leaves<br />
2 large onions (deep fried until brown)<br />
A few drops of yellow coloring/saffron<br />
1 tomato (chopped)<br />
1 green chilli (slit)<br />
1 pc of cinnamon stick<br />
2 cardamom pods<br />
2 star anise<br />
2 cloves<br />
Salt to taste<br />
1 tbsp of ghee<br />

You have to prepare the tandoori chicken before you cook the rice, you can prepare in advance or right before you cook the rice. Now let us prepare the ingredients for rice, make sure you wash the rice until the water runs clear, then drain and keep aside.<br />
<br />
In a pan, pour ghee and add cinnamon stick, cardamom, star anise, cloves, green chilli, onion and ginger garlic paste, stir all these until it releases the wonderful aroma. Next add chopped tomato and tandoori powder and fry until tomato turns mushy, then add rice and mix well.<br />
<br />
Transfer all the ingredients above to a rice cooker and add water and salt, let the rice cook until its fluffy and dry. Now add the yellow coloring, place the chicken pieces on the rice, add fried onions and coriander leaves, close the cooker's lid until you are ready to serve the rice.<br />
<br />
Gently mix the cooked rice, and now our Tandoori Chicken Briyani is ready to be served. I have served this with Onion Raita.<br />

500gm of boneless chicken (cut into bite size chunks)<br />
1 cup of plain yogurt<br />
1 tbsp of lemon/lime juice<br />
1 tbsp of Tandoori powder (store bought)<br />
A few drops of red coloring<br />
Salt to taste<br />
Oil/ Ghee for Pan Searing<br />

Mix chicken, yogurt, lemon/lime juice, tandoori powder, red coloring and salt, mix everything and marinate for minimum 4 hours or over night. I have marinated over night in the fridge.<br />
<br />
So after marinating, heat a flat frying pan or griddle pour some ghee or oil and sear the marinated chicken pieces until it is cooked and has some char marks on it. Do not crowd the griddle, give enough room for the chicken to be moved, cook everything in batches and keep aside.<br />
<br />
Now our Pan-Seared Tandoori Chicken is ready to be served with slices of lemon and onions.<br />

250g of chicken boneless (cut into big chunks)<br />
5 dried shiitake mushroom (soaked and cut into half)<br />
5 dried red chillies (cut into half)<br />
2 inches of young ginger (sliced)<br />
3 cloves of garlic (minced)<br />
1 tbsp Shao Hsing cooking wine/ white vinegar<br />
2 tbsp of spring onion<br />
1 tbsp of corn starch<br />
1 tbsp of chilli sauce<br />
2 tbsp of oyster sauce<br />
1 tsp of dark soy sauce<br />
1 tsp of light soy sauce<br />
1 tsp sesame oil<br />
1 tbsp of cooking oil<br />
1 cup of water<br />

In a pot, pour cooking oil add dried red chilies when its plumped up add in garlic and ginger fry for a minute then add chicken that have been mixed with corn starch, fry until the chicken releases water. Then add sesame oil, oyster sauce, chilli sauce, dark soy sauce and light soy mix well then add water and let chicken cooks well. Now add in Shao Hsing cooking wine or white vinegar (this give some tangry sharp taste), now add mushrooms and let it cook further until the gravy thickens. Now our Chicken and Mushroom in Oyster Sauce is ready, add in the spring onion and our dish is ready to be served.</div>

2 pcs of chicken breast (cubed)<br />
1/2 cup of shredded cabbage<br />
5 pcs of dried red chilli<br />
1 tsp of dark soy sauce<br />
1 tbsp of light soy sauce<br />
3 cloves of garlic<br />
1 onion (chopped)<br />
1/4 cup of dried shrimp<br />
1/4 cup of water<br />
2 bird eye chilli<br />
2 eggs beaten<br />

Blend dried red chilli, garlic, dried shrimp and water until smooth and keep it aside.</div>

Heat oil in a pan and fry the chicken pieces until half cooked, drain and keep it aside, fry the beaten eggs and scramble it until you get small pieces.</div>

Now in the same pan pour oil and simmer chilli paste until it changes in color to deep red and oil separates. Then add chicken, cabbage, dark soy sauce and light soy sauce mix well until everything is well incorporated then add in boiled noodles, toss well so that the chili paste and noodles are mixed perfectly. Adjust seasoning depending on your preference and Fried Meehoon is ready to be served. Garnish with scrambled egg and bird eye chilli that have been sliced.</div>

In a mixing bowl beat eggs with sugar and vanilla extract then add water, vegetable oil and milk. Now add in the sifted dry ingredients gradually without over mixing the batter.</div>

Pour this batter on a baking pan which have been applied with butter and flour (I have used bundt pan), dust off excess flour and bake this cake for 30-45 minutes at 150 to 170 degrees depending on your oven requirement. The cake is done when you insert a skewer and it comes out clean, let the cake cool overnight or at least few hours before pouring the ganache.</div>

1 tsp of red chilli powder<br />
1/4 tsp of turmeric powder<br />
1/4 tsp of garam masala<br />
2 onions (chopped)<br />
2 tomatoes (chopped)<br />
2 green chillies (slit)<br />
1 tbsp of ginger garlic paste<br />
2 tbsp of cashew nuts<br />
2 tbsp of raisins<br />
A bunch of coriander leaves<br />
1/2 cup of mints (chopped)<br />
1 cinnamon stick<br />
2 star anise<br />
4 cloves<br />
2 cardamom<br />
3 tbsp of ghee<br />
1 cup of water<br />

In a pan, heat ghee and add cinnamon stick, star anise, cloves, cardamom and stir for a minute then add chopped onions fry until translucent. Now add in ginger garlic paste, mix well and add chopped tomatoes and cook until tomatoes turn mushy. Then add green chilli, chilli powder, coriander powder, turmeric powder, fennel powder and cumin powder, mix everything together so that the spices incorporates well and add in chicken drumsticks, half a cup of water. Let all this cook on medium flame until the chicken is cooked and the liquid is evaporated.</div>

Now add in boiled eggs, 70% cooked rice to the chicken mixture mix everything well and pour in the balance water, adjust seasoning and cover to cook until rice is fluffy. Mix in coriander and mint leaves to the rice and cover for a couple of minutes so that the flavor will be infused in the rice. Finally add in cashews and raisins that have been fried in ghee to garnish.</div>

1 cup of green capsicum (diced)</div>

1 cup of grated mozarella cheese</div>

1 can of Prego tomato sauce</div>
<div style="text-align: justify;">
200 g of minced chicken</div>
<div style="text-align: justify;">
1 tsp of corn flour</div>
<div style="text-align: justify;">
A dash of pepper</div>
<div style="text-align: justify;">
A pinch of salt</div>

For the topping take bowl add minced chicken, corn flour, salt and pepper and mix well. Make small balls and keep it aside. Take a pan, add the tomato sauce let it simmer for a couple of minutes then add in the chicken meatballs and cover to cook, then add in the diced capsicum let it cook until the chicken meatballs are cooked, adjust the seasoning. Let this cool until its ready to be applied to the pizza base.</div>

For the base, mix yeast warm water and sugar and let it foam it takes about 10 to 15 minutes. Pour this mixture to bread flour, olive oil and salt mix , knead until everything is well incorporated and set to rise for an hour. Once the dough rise punch it down to release the air and separate the dough to 2 part. Then roll the dough to your preference for thin crust or thick and apply the topping, cheese and bake at 170 degrees for 20-25 minutes or until the base is cooked. I have used 8'' cake pan and applied some olive oil to the pan before laying in the base.</div>

1/2 cup of cooked white rice<br />
1 cup of coconut milk<br />
1/2 cup of grated coconut<br />

Blend cooked rice, sugar, yeast and grated coconut with a little water then add rice flour and for a couple of minutes. Now pour this mixture into an airtight container with a pinch of salt and let it ferment for at least 7 to 8 hours or overnight (the consistency of mixture should be thick something like idli mixtures)</div>

After the mixture sits to ferment, mix 1 cup of coconut milk to dilute the fermented mixture, it should be watery not thick to make sure you get crispy edges with spongy middle. Mix the coconut milk only when you are ready to make the appam.</div>

You need appam pan, heat appam pan on low flame and pour a ladle of mixture and rotate the pan to get thin and crispy edges and the balance mixture will form spongy middle. Cover and cook until the edges turn golden brown and crispy. Now remove it to a plate and serve with freshly squeezed coconut milk (added with sugar).</div>

Add in coriander leaves and mix well, now our Egg and Sausage Stir Fry is ready to be served. Best eaten with white rice, bread and roti.</div>
