Prawn Fritters/ Cucur Udang

One great dish that can be served on a rainy day especially for tea break is Prawn Fritters or known as Cucur Udang in Malaysia. This is very simple and quick to make, it needs very few ingredients. let us look at how to make this easy peasy fritters;


Ingredients:

2 cups of wheat flour
1 cup of prawns(shelled and deveined)
1/2 cup of chives (cut 1 inch length)
1 tsp of chili flakes
1 tsp of baking soda
Water for the batter
Salt to taste
Oil to fry

Mix all the ingredients above and leave to rise for approximately 30 minutes. The batter should not be runny nor too thick, it should be slightly thicker than cake batter.

Fry the batter into small balls until golden brown and drain on kitchen towel. You can even add chopped onions in the batter, for vegetarians you can substitute prawn with corn kernels or any other hard vegetables.
