Not so Trifle

This is a dessert invented in the event of not to waste food, I have used the Salted Brownies that I made before, I spared some brownies crumbled to try making black forest trifle but I was too busy to go and purchase ingredients for it. So, I whipped up  chocolate butter-cream for this dish and used the balance strawberries I had in my pantry. Let's check how to make this;


Ingredients:
Trifle
2 cups of crumbled brownies
1 cup of chocolate butter-cream
2 whole strawberries 
1 tbsp of cocoa syrup

For Chocolate Butter-Cream
1 cup of unsalted butter (softened)
3 1/2 cups of icing sugar
1/2 cup of cocoa powder
4 tbsp of heavy cream
1 tsp of vanilla extract
1/2 tsp of salt

First of all prepare the butter-cream and set aside, whip the softened butter, gradually sift in icing sugar and cocoa powder and mix for a couple of minutes then add vanilla extract, salt and heavy cream, do not over beat or it will be curdled.

Now for the setting of the trifle, get a few glasses first add crumbled brownies, then spoon the butter -cream and alternate with brownies and butter-cream again. Finally pour some cocoa syrup and garnish with sliced strawberry.

Now our Not So Trifle is ready to be served, do try and let me know how it turned out for you!

Strawberry Swirl Cake

Christmas is just around the corner, I'm so excited about it. I'm planning for a small celebration with my family and as another step to Christmas I baked a wonderful and delicious cake, Strawberry Swirl Cake. I don't want to go on blabbering here let me take you to the recipe;


Ingredients:
1 cup of all purpose flour
1/2 cup of castor sugar
1/2 cup of soft butter
1/2 tsp of baking powder
1/2 tsp of baking soda
1 tsp of rose essence
1/4 cup of evaporated milk
1/4 cup of strawberry filling
2 drops of red coloring (optional)
2 large eggs

In a mixing bowl, whisk egg, sugar and butter until fluffy. Now add in rose essence, red coloring and evaporated milk. Now add baking soda, baking powder and all purpose flour and mix until everything are well incorporated. 

Pour the mixture in a baking tray depending on your preference and finally add the strawberry filling on top of the cake mixture, using a stick swirl the filling in the cake mixture to get a perfect swirl once baked. Then bake the cake at 150 degrees for 40 minutes.

Once the cake is perfectly baked let it cool before  you unmould the cake and cut into slices. Now our Strawberry Swirl Cake is ready to be served.

Strawberry Milk Toast

Thinking about what to prepare for breakfast always gives me a tough time, I need something healthy and easy to make before I leave to work. I love omelette toast very much but I don't like it sweet either, when I opened my fridge door I saw Strawberry Milk that my husband bought then got an idea. While thinking what else to add I thought cinnamon powder and strawberry milk will get along well, so I decided to make Strawberry Milk Toast with cheese slices.


This is a very easy to do recipe for any time of the day, even kids would definitely love it. Now let me bring you to the recipe and how I made this.

Ingredients;
4 sliced of bread
2 eggs (beaten)
1 tsp of butter
5 tbsp of strawberry milk
A pinch of cinnamon powder
A pinch of salt


Lightly beat the eggs

Add in the strawberry milk

Add butter, cinnamon powder and salt

Dip one slice of bread to the egg mixture

Soak both the side of the bread in the egg mixture

Now toast the bread on a hot pan

I prefer both the sides of the bread to brown well

I have added a slice of cheese on the bread slice and top with 
another hot slice making it a sandwich

Now our Strawberry Milk Toast is ready to be served, you can add sugar 
if you are serving for kiddos, they would definitely love it.

Egg-less Strawberry Yogurt Custard Cake

I was planning to bake a cake, but I don't know what cake to bake, so I went roaming into my kitchen to see what are the ingredients I can use to bake this cake. I found a pack of custard powder unused for two weeks now, then I saw strawberry filling and strawberry flavored yogurt. I have never baked a custard cake before but I'm going to do it today.



This is a lovely cake, very simple and easy to bake. Now let us see how I baked this;

Ingredients:

1 cup of wheat flour
1/2 cup of custard powder
1 cup of brown sugar
1/2cup of strawberry yogurt
1/2 cup of strawberry filling
1/2 cup of melted butter
1 tsp of baking powder
1 tsp of baking soda
1/2 cup of milk

Preheat oven to 150 degree for 10 minutes.

In a mixing bowl, add in sugar and butter and mix together until sugar is almost dissolved. Then add in yogurt and custard powder, mix everything now add flour, baking soda and baking powder. 

When all the ingredients come together add in strawberry yogurt and filling, incorporate the mixture and finally add the milk little by little until you get the right consistency of a cake mixture. 

Pour the cake mixture in a cake pan and bake for 35-40 minutes at 150 degree or adjusting to your oven.
I have use ramekins to bake mine. Cool the cake before serving, you can serve with strawberry sauce or custard sauce depending on your preference.

Raspberry Brownie

I have been missing my parents and sister so much lately, it's been more than a month since I have visited them. I'm so sad that I couldn't follow my brother this week as I have a few things to be settled here, especially a lot of cleaning to do. The only thing I could send to them when my brother goes back is baking a cake for them, I have baked Raspberry Brownie.


My sister loves chocolate cakes, so instead of baking a plain cake I thought of baking a raspberry brownie which definitely she would love to have. Now let us look at the recipe, it's a simple recipe I made without any measurement. It was so soft and moist, most importantly baking it makes my whole house smelled like raspberry.


Ingredients:

50g of wheat flour
2 tbsp raspberry filling
100g butter (room temp)
50g cocoa powder
75g brown sugar
1 tsp baking powder
1 tsp vanilla essence
A handful of choc chips
A pinch of salt
2 eggs

In a mixing bowl, mix eggs, brown sugar, butter and whisk well. Then add vanilla essence, cocoa powder, baking powder, wheat flour and raspberry filling incorporating well all the ingredients added.


Butter square cake pan and pour the mixture in, evenly add the salt and choc chips on the surface of the mixture. Bake the brownie for 30 mins adjusting the temperature between 150-170 degree. Once baked let it cool on a wire rack then cut into desired size and ready to serve.
