Mint Watermelon Juice


Ingredients:

3 cups of watermelon (chilled)
5 mint leaves (or as you prefer)
1 tsp of sugar (optional)

Blend all the ingredients above and ready to be served for a nasty, horrible weather. Hehehe...this is lunch for me. Do try and enjoy!

Simple Clear Chicken Soup

Hi, everyone, I'm glad to meet all of you after a long break. Some of you might be thinking what have happened to Arthy,she is missing in action. Anyway to be frank, I have been extremely busy with work, work and work only, I have cooked many dishes all these days but never had enough time to take pictures. Now let us take a look at what I have to share with you today, Simple Clear Chicken Soup.


Ingredients:

100g of boneless chicken (sliced thinly)
1 pc of chicken carcass/ bones (optional
10 pcs of white fish balls
1/2 a carrot (sliced)
A handful of cabbage (cut coarsely)
A handful of cilantro leaves
A handful of spring onion (sliced)
1 chicken stock cube (store bought)
1.5 liter of water

In a pan, boil water, stock cube, chicken carcass until the stock reduces to 2/3. Now add in chicken slices, carrot, cabbage and fish balls, let it simmer until chicken is completely cooked. Finally before serving add in cilantro and spring onion. Adjust seasoning if needed and now our Simple Clear Chicken Soup is now ready to be served.

Chicken and Tofu Tom Yum Soup


Ingredients:

1 pc chicken breast (cut thinly)
1 tofu diced
1 onion sliced
1 tomato diced
2 pc bird eye chili (slit)
2 tbsp of tom yum paste
3 cups of water
Salt to taste

In a pan, boil 3 cups of water with tom yum paste. Now add chicken slices and let soup boil until chicken is completely cooked. Then add sliced onion, tomato, tofu, bird eye chili and salt. Let the soup boil for another 10 minutes and it's ready to be served.

Do try this simple, anyone can cook soup and let me know how it turned out.

Ragi Chapati

Planning healthy meal for family takes no much time if you have the passion for cooking, eating usual chapati everyday can be a very boring thing at times. So, I have combined ragi with atta flour to make Ragi Chapati today. My first attempt didn't fail me, it turned out to be a very tasty chapati and most importantly healthy.

Now let us look at how I made this;


Ingredients:

1 1/2 cup of atta flour
1/2 cup of ragi flour
1 cup of water
2 tbsp of oil + 1 tsp oil
A pinch of salt

Take a bowl, add salt, butter, ragi  and atta flour with half cup of water, knead the dough well incorporating all the ingredients. Then add the balance half cup of water, knead well until the dough is soft and smooth. Adding ragi to atta flour knead a little more water compared to atta flour alone, you must knead the dough well so that when you toast the chapati it wouldn't be so hard. Apply around 1 tsp oil to the well kneaded dough and cover with cloth.


Roll dough into small balls and roll with a chapati 
roller to spread out the dough like chapati


Toast both side of the chapati on a pan over medium flame





Now our Ragi Chapati is ready to be served with your preferred curry, keema or kurma

Chapati

Chapati is one of our favorite dish for breakfast, lunch and dinner, it is much more healthier to eat chapati to rice which is very high in carbohydrate. Every family and every cook have their own recipe for soft chapati, now let me share my version of it.


Ingredients:

2 cups of whole wheat flour/ atta
2 tbsp of butter
1 tbsp of oil
Water

In a bowl, add flour and butter then mix well, now add in water and knead the flour to form a soft textured chapati dough. It takes approximately 1 cup of water for to get the perfect consistency of the dough. I do not add any salt to the dough because I have added butter. Once done apply the oil to the dough so that it doesn't dry and cover with cloth.


Divide dough into equal small balls and roll into nice round shaped chapati


Toast the rolled dough on a griddle


Flip to the other side and make sure both sides are toasted well, press the 
chapati with a clean cloth so that the chapati will be puffed


Now our chapati is ready to be served, I have served my chapati with sardine peratal

Chicken Soup



Ingredients:

5 pcs chicken (cleaned)
1 onion sliced thinly
3 cloves of garlic
1 cu of chopped cabbage
1 tsp of pepper powder
1/4 tsp of turmeric powder
1/2 tsp of salt
3 cups of water

Mix all the ingredients above and bring to a boil until the chicken is completely cooked, I didn't use any oil because chicken will release oil, our chicken soup is ready to be served. 


This soup is very filling and healthy for everyone and most importantly its easy to be prepared.

Chicken & Cabbage Diet Soup

Talking about diet plans, especially diet to loose weight, all of you definitely have all sort of different diet plans that you have tried and succeed personally. To name a few- Atkins Diet, High Protein Diet, Low Carbohydrate Diet, Cabbage Soup Diet, Low Calorie Diet, 3 Apple a day diet, Banana Diet, Grapefruit Diet and many more. All this diet plans use different dietary plans to achieve targeted weight loss depending on individuals capability and health conditions.

I have combined two types of diet plan which comprises of Cabbage Soup and High Protein Diet.
I have a very easy diet meal for those who are on diet, especially for people who are on high protein  and low carbohydrate diet.


This is a very very very simple recipe and can be cooked within 15 minutes, come let us look at how I made this soup.

Ingredients:

1 cup of chicken keel cubed
2 cups of cabbage chopped
1 large onion sliced
3 garlic pods
1 tsp of ground black pepper
1 tbsp of fried onion
3 cups of water
Salt to taste

In a pot, add all the ingredients above and let it boil until the water reduces to 1 1/2 cup or as desired.  Garnish with fried onion and our soup is ready to be served, make sure you consume while its still hot.
