Stir Fried Penne Pasta


Ingredients:
2 cups of penne pasta 
1/2 cup of minced chicken
3 dried red chilli
1 onion (sliced thinly)
3 garlic (chopped)
3 tbsp of oyster sauce
3 tbsp of oil
Salt to taste

Boil the pasta, with salt and a few drops of oil, once its cooked drain the pasta and set it aside.

In a pan, heat oil and fry garlic and onion then add dried chilli and onion, fry until the chicken is completely cooked. Now add in the oyster sauce and cooked pasta, mix well and season with salt, make sure you taste it before adding as oyster sauce gives saltiness too.

Now our Stir Fried Penne Pasta is ready to be served. Do try and let me know how it turned out for you!

Simple Fried Flat Noodle

Simple and easy to prepare meal would be what every woman prefer making especially when she's busy and do not have much time. Okay to go to that list I have prepared this Stir fried Flat Noodle, I have added chives, tofu and chicken pieces to this dish. Now let us see how to make this;


Ingredients:
1 pack of flat noodles (fresh ones)
3 pcs of white tofu (cubed)
2 pcs chicken breast (cubed)
5 cloves of garlic (diced)
2 tbsp of chilli sauce
2 tbsp of chilli paste
1 tbsp of light soy sauce (depending on individual preference)
A bunch of chives (cut into 1 inch length)


Heat oil in a a wok


Fry diced garlic once lightly browned add cubed tofu and fry for a couple of minutes


Then add cubed chicken pieces and fry until almost cooked


Add in the chilli paste and chilli sauce to the chicken and tofu, mix evenly


Add in chives and stir together with the other ingredients


Now add the flat noodles and mix well, add in the light soy sauce


Now our Simple Fried Flat Noodles is ready to be served

Bow Tie Pasta in Tomato Sauce

Pasta is all time favorite for many of us, as it is very easy to prepare and not very time consuming. Even a school child could prepare this meal,  preparing and having 3 to 7 course meal every day is very time consuming and can be really boring at times. So I always try to make simple dishes in between to make life interesting.

There are many types of pasta named according to their shapes, there are Penne Rigate, Fusili, Fusili Spirale, Farfalle (Bow tie), Gnocchi, Conchiglie Rigate and many other shapes. I have tried almost all the shape and for this recipe I have used Farfalle or also known as Bow Tie pasta. I'm sure feeding children with this cute shaped pasta is total fun.


Now let's check on the recipe, I made this sauce from scratch.

Ingredients:

1 cup of bow tie pasta
1/2 cups of tomato chunks
1 cup of canned tomato paste/puree
1 cup of minced chicken
1 tsp dried oregano
1/2 tsp ground black pepper
1 tbsp onion diced
2 garlic diced
1 tbsp olive oil
Salt to taste
Water to boil pasta
Handful of grated cheese

Boil pasta with some salt  and few drops of olive oil until the pasta is well cooked, drain and set aside.



In another pan, pour oil add in garlic, onion, stir for a minute and add minced chicken. When the minced chicken almost cooked add in tomato chunks, tomato puree, salt, dried oregano, ground black pepper and let it simmer until the chicken is completely cooked.


Simmer until the sauce is thickened, pour  sauce over the boiled pasta and serve with some grated cheese. You can even stir in the sauce into pasta before serving.

Char Kway Teow/ Flat Noodle Stir Fry

Char Kway Teow is a popular hawker dish in Malaysia and Singapore, it's my family's favorite too. It's made of flat rice noodle cooked in a wok, this is a very simple dish and most importantly anyone can make this. Char Kway Teow is a complete meal and careful of the calorie, yea it is high in calorie so a small portion is very filling.

Usually this meal is stir fried with eggs, prawns, cockles, bean sprout, chives, chili paste and soy sauce but I as usual have altered this recipe according to my family's preference. We don't really prefer cockles so I have substituted chicken for prawn and cockles.

Let us look at how I have prepared this, to make things easy I'm going to give you pictorial step by step preparation.



Ingredients:

1 pack of kway teow/ flat noodle
250g chicken thinly sliced
3 eggs beaten
4 garlic diced
3 tbsp chili paste (onion+dry red chili+garlic)
1 cup of bean sprout
1/2 cup of chives
2 tbsp of dark soy sauce
2 tbsp of light soy sauce
Oil to fry

For chili paste blend until fine 1 onion, 10 pcs dry red chili and 5 garlic without adding much water.


In a wok, pour oil add diced garlic, stir for a minute add sliced chicken, 
chili paste and stir until chicken is cooked and gravy dries


Add in Kway Teow and mix well incorporating noodle 
with chicken and chili paste


Now add in chives, bean sprout, both the soy sauce and stir well, 
do add extra light soy sauce to adjust to your preference as we don't eat if its very salty


Pour in beaten egg at one side of the wok and scramble it 3/4, 
then mix in the noodle incorporating with the scrambled egg


After stirring everything, this is how the fried noodle should be


Our Char Kway Teow is ready to be served, enjoy!

Fried Meehoon/ Fried Rice Noodle/Fried Vermicelli


I have prepared very simple dish, Fried Rice Noodle, this dish is quite on the spicy side because we love spicy food. Friends you can adjust the spicy factor in your dish accordingly.

Let's look at the recipe.

Ingredients:

1/2 pck of rice noodle (blanched in hot water)
1 cup of chicken sliced thinly (fry in shallow oil)
10 pcs taupok/ tofu
5 tbsp of chili paste
A handful of dried shrimp (soaked and drained)
1 tbsp thick soy sauce
1 tbsp light soy sauce
2 onion sliced
5 garlic pods
2 tbsp oil


Blend chili paste, dried shrimp, onion and garlic with some water and keep aside.

In a wok, pour oil and add the blended ingredients and let it simmer, this paste should be cooked well. To this now add fried chicken and taupok, let it cook for 5 minutes. When the chili paste almost thicken add soy sauces stir well and add blanched rice noodle. 

At this point make sure you turn off the flame or at least put in low flame, you don't want to burn the noodles. Mix noodle well with the chicken and chili paste mixture and make sure all the ingredients are well incorporated. Adjust saltiness before serving, now our Fried Rice Noodle is ready to serve.

My style Indian Vegetarian Noodle



I always prefer to cook simple dishes especially on a busy day. Let's look at the recipe for my style fried noodles. Its very simple to prepare and anyone can do it.

Ingredients:

1 pack of yellow noodle
1 stalk of mustard green (optional)
2 pcs white tofu (cut and fried)
10 dry red chili*
5 cloves garlic*
1 onion*
2 tbsp oil
1 tsp dark soy sauce
2 tsp light soy sauce

Blend all the ingredients marked * with little water to form paste and keep aside.

In a wok, pour oil and add the blended ingredients and saute until cooked. Now add fried tofu and mustard green and fry for a couple of minutes. Add in both the soy sauces and mix well and make sure the tofu is well coated.

At this moment, put in the noodles and mix well with the items above. Now our noodle is ready to plate and served. Make sure you have sufficient spice paste so that the noodles well coated with it. If it's too dry you will loose the excellent taste of the paste.

Hokkien Noodle



I'm always a big fan of Chinese cuisine and I have it at least twice a week. This noodle have been my favorite all this years and I was BW and found the recipe from Rasa Malaysia. I totally love this dish after trying it, it tastes better than you buy from the restaurants. I have altered this recipe according to my taste, please pardon me on this. Okay let us look at the recipe without wasting much time.


Ingredients:

200g chicken sliced 1cm and marinate it with ingredients listed below:
2 cloves garlic crushed
White pepper (A pinch)
1 tbsp soy sauce
1/2 tsp oyster sauce
1 tsp sesame oil
1 tsp corn starch

Marinate and leave aside.

Condiments:
Prawns
White fish ball
4 cloves garlic chopped
Some Chinese cabbage
200g Hokkien noodles

Seasoning:

3tbsp oil
4 tbsp dark soy sauce
2 tbsp light soy sauce
3/4 cup chicken stock
2 tsp sugar
A pinch of white pepper
1 tbsp corn starch
2 tbsp cold water


In a wok, add oil and then add marinated chicken when the chicken almost cooked add in prawns, fish ball and chinese cabbage now fry for a minute.

Add in noodles and give a quick toss, now add dark soy sauce, light soy sauce coat the noodles.Add chicken stock, sugar and white pepper. 

Take corn starch and cold water mix well to make slurry and mix to the noodles. This will thicken the gravy. Adjust saltiness and sweetness of the gravy accordingly.

Hokkien noodles are ready now and serve with garlic chili sauce or belacan sambal. Best eaten while its hot.
