Mutton Pepper Fry

I cooked this dish so specially for Diwali for my mom as she don't eat chicken and loves mutton dishes a lot. I cooked this twice in a week during Diwali as the first time mom said she couldn't get enough of the dish as we served for visitors also. This dish is so spicy and delicious, the thick gravy best eaten as it is or with pepper rasam.

Now off to the recipe;

Ingredients:

1kg of boneless mutton
3 large onions (sliced)
1 tomato chopped small
2 sprigs of curry leaves
1 tsp of cumin seed
2 tbsp of ginger garlic paste
2 tbsp of meat curry masala
1 tbsp of coarse pepper powder
1 tbsp of chilli paste
1 tsp turmeric powder
2 tbsp of roasted coconut paste (kerisik)
1 cinnamon stick
3 star anise
3 cloves
1 tbsp of oil
Salt to taste
3 cups of water
A bunch of coriander leaves

I have used pressure cooker to cook mutton, clean mutton add turmeric powder, water and salt then pressure cook until 5 or 6 whistle depending on the tenderness needed. Once done drain the mutton and take out the excess fat on the meat, keep aside the mutton and save the water for later use.

In a pan, pour oil then add cinnamon stick, star anise, clove, curry leaves, cumin and fry for a minute. Then add ginger garlic paste, onion, tomato and let the tomato turn mushy. Now add mutton, meat curry masala, chilli paste, pepper powder and salt then pour 2 cups of water from boiling the mutton let all the ingredients incorporate well and the gravy reduces to half.

Once gravy reduced, add coconut paste and let gravy completely thicken. Adjust seasoning if needed and our Mutton Pepper Fry is ready to be served with a bunch of coriander leaves.

Pan Seared Lamb Burger

Hello everyone how are you doing today? I'm sure all of you are in pink of health and happiness, this  is simply because it's Friday. Wooo Hooo...who doesn't like Friday, almost 90% of us wait eagerly for it.The next whole week would be a boring one for me because my husband went on an overseas business trip and that's nothing I would love about this weekend. 

I'm just trying to make the next few days a busy one by keeping myself fully occupied so that I wouldn't be sad thinking about being far apart from my husband. Luckily I have my brother here to accompany me even though he's very busy with his studies and part time jobs. Okay let's move on, I don't want to be carried away with my feelings. 

I have made Lamb Burger patties for dinner, since I don't take any carbohydrate based food now I have to find ways and means to make my daily meals as interesting as possible. I bought minced lamb and made burger patties for dinner, this is a basic and simple patty.

Come let us look at the recipe and how I made this burger....


Ingredients:
250g minced lamb
1 onion chopped finely
1 tsp black pepper powder
A handful of cheese powder
A pinch of salt


Take minced lamb in a bowl


Add the cheese powder to the minced lamb


Now add in chopped onion


Add in pepper powder and salt, mix all the ingredients added and form patties,
you can add egg and corn flour to bind the meat but I didn't want 
any extra calories from it so I didn't add


Pan sear the burger patties on a pan, I did not add any additional oil/ butter


Cook both sides of the patties evenly for about 5 minutes on every side,
I even pour off the excess oil released by the meat


I have added cheese slices on top of the patties, serve with mayonnaise and mustard 
sauce or you can serve with any other sauce of your choice,can you see the juice
oozing from the patties that shows how juicy and succulent the meat was

Mutton Dry Curry/ Mutton Varuval


Hi everyone, this is my second mutton recipe in this year. I'm not so good at cooking mutton, because we hardly eat mutton. Okay but I do need to master my skills in cooking mutton for others even if I don't eat, wow this seems like mastering an art. Cooking is an art indeed!

I have tried to make this dish a special one by adding suitable masala and voila it was so delicious and will definitely make this dish again soon. Ok now let's go to the recipe;


Ingredients:

500g mutton pieces
3 onion sliced
1 large tomato chopped
1 sprig curry leaf
1 tbsp ginger garlic paste
1 tsp dry chili powder
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp garam masala powder
1 tsp mutton masala powder
1 tsp black pepper powder
2 cups of water
Salt to taste
1 tbsp oil

Pressure cook mutton with ginger garlic paste, one onion, tomato, turmeric powder, water and salt until meat is fully cooked. Drain out mutton and keep aside, don't throw the water as we will use it later.

In another pan, pour oil add in balance onion, curry leaves saute for a couple of minutes. Then add in all the masala powders except for black pepper powder. Stir well until all mixed well, pour water and let it boil until water evaporates.

Now add in the cooked mutton to the pan above and stir well to incorporate masala with mutton. Then add black pepper powder, let the gravy thicken.Adjust salt if needed. Now our Mutton Dry Curry is ready to be served.

This mutton curry was so delicious and you won't stop with one helping......

Mutton Curry

I hardly cook mutton for lunch or dinner because it is said that mutton increases the chances of getting high blood pressure, once in a while won't do any harm I guess. I have prepared Mutton Curry for lunch and it finger licking good, let's check how I made this.



Ingredients:

1kg mutton (boneless)
2 tbsp oil
2 onion sliced
2 tomatoes chopped
2 potatoes (cut into wedges)
1 1/2 tbsp ginger garlic paste
3 pcs candle nuts
2 cinnamon stick
3 cardamom
3 cloves
2 star anise
2 bay leaves
2 sprigs curry leaves
2 tsp fennel seeds
1 tsp cumin seeds
2 tsp ground black pepper
1 1/2 tbsp chili powder
2 tbsp coriander powder
1/2 tsp turmeric powder
1 cup of water
Coriander leaves
Salt to taste

Wash and clean mutton keep aside, blend candle nuts with 1 tomato.

In pressure cooker, pour oil add cinnamon, cloves, cardamom, star anise, fennel seeds, cumin seeds and bay leaves saute for a minute. Now add in onion, tomato and candle nut paste which we have blended earlier and add salt, fry for a couple of minutes.

After that, add in ginger garlic paste, chili powder, coriander powder and turmeric powder and stir in well for 5 to 6 minutes. Then add mutton pieces and a cup of water, add in curry leaves and ground black pepper and close lid, until the mutton is perfectly cooked. I have added potatoes to make the curry thicker, you can potato when mutton is 3/4 cooked.

Our Mutton Curry is now ready to be served, garnish with coriander leaves. Do try and let me know how it turned out.
