Simple Egg Roast


Ingredients:

4 eggs (hard boiled and shelled)
1 large onion (sliced)
1 tbsp of ginger garlic paste
1 tsp of red chilli powder
1 tbsp of coriander powder
1/4 tsp garam masala powder
A pinch of turmeric powder
1 cup of water
2 tbsp of oil
Salt to taste

In a pan, heat oil and add ginger garlic paste fry for a while then add sliced onion and fry until translucent. Now add in red chilli powder, coriander powder, turmeric powder and fry until fragrant, then add in garam masala and fry until oil separates. Next pour water and let the masala simmer and thickens. Finally add in salt and eggs, let the eggs absorb the masala. Now our dish is ready to be served.

Fish Nugget

Hi friends how are you? Many bloggers have started Diwali special posts, this year we are not celebrating as my aunt passed away, so no Diwali posts will be up on my blog. Maybe, I will bake some cake and cookies, not sure of it yet. So now let's get to today's post, I made Fish Nugget few days back only now I get the time to post this here. 

During my childhood I don't prefer having fish whether fried, in curry or done anyway except for sharkfish, string ray or pomfret, not because of anything but I'm scared of the tiny bones in it, I was a very fussy eater and tortures mom so much.  I have been choked many times, how careful I eat also I end up choking and will vomit the whole day to remove the bones. 

When I went to study in university, I never ever eat fish as I feel its not prepared hygienically and the fishy smell kills me. So those days, I used to crave for mom's fish dishes and during every semester break I go back I will request mom to make fish dishes for me. All the dishes mom makes I used to crave for, mom will be so happily cook for me as I changed from a fussy eater to anything mom cooks I will eat.

Okay now coming back to our post today, I made Fish Nugget from the Dory fillet that I bought few days ago. I was thinking what to make and end up making nuggets but I cut into bigger chunks. You can cut into the size you prefer.


Ingredients:

500gm of fish fillet (cut into bite size pieces)
1 cup of multi purpose flour (KFC)
2 eggs beaten
2 tbsp of chilli flakes
1 tsp of black pepper

Mix multi purpose flour with black pepper and keep it aside, the flour contains salt so I didn't add any extra salt. Cut fish and dry it with paper towels and dip it into beaten egg, next dip it into flour, remove excess flour and fry it in hot oil until its golden brown. 


Remove fried fish from oil and drain it to remove excess oil, before serving sprinkle some chilli flakes to the fish nuggets. Now our Fish Nugget is ready to be served, you can serve Mayonnaise, Chilli Sauce, Ketchup or Tartar Sauce as dipping for the nuggets.

Onion Omelette


Ingredients:

2 large eggs (beaten with 2 tbsp of water and salt)
1 tbsp of coriander leaves (chopped)
2 tbsp of grated cheese
2 onions (diced)
3 cherry tomato (cut into half)
A pinch of salt
A pinch of pepper
1 tbsp of olive oil

In a pan, heat oil and fry onion until translucent and pour beaten eggs, top it with grated cheese and pepper. Let it cook and add chopped coriander leaves, then flip the omelette to cook on the other side. Now our Onion Omelette is ready to be served, garnish with cherry tomato. Best eaten while its hot.

Fried Meehoon (Rice Noodle)


Ingredients:

A pack of meehoon (rice noodle, boiled and drained)
2 pcs of chicken breast (cubed)
1/2 cup of shredded cabbage
5 pcs of dried red chilli
1 tsp of dark soy sauce
1 tbsp of light soy sauce
3 cloves of garlic
1 onion (chopped)
1/4 cup of dried shrimp
1/4 cup of water
2 bird eye chilli
2 eggs beaten
Oil

Blend dried red chilli, garlic, dried shrimp and water until smooth and keep it aside.

Heat oil in a pan and fry the chicken pieces until half cooked, drain and keep it aside, fry the beaten eggs and scramble it until you get small pieces.

Now in the same pan pour oil and simmer chilli paste until it changes in color to deep red and oil separates. Then add chicken, cabbage, dark soy sauce and light soy sauce mix well until everything is well incorporated then add in boiled noodles, toss well so that the chili paste and noodles are mixed perfectly. Adjust seasoning depending on your preference and Fried Meehoon is ready to be served. Garnish with scrambled egg and bird eye chilli that have been sliced.

Moist Chocolate Cake with Chocolate Ganache


Ingredients:

Cake
300g of all purpose flour
100g of cocoa powder
400g of castor sugar (I have used 300g only)
1 tsp of baking powder
1 tsp of baking soda
1 tsp of vanilla extract
250ml of hot water
250ml of vegetable oil
250ml of low fat milk
3 large eggs


Sift flour, cocoa powder, baking powder and baking soda and keep aside for later use.

In a mixing bowl beat eggs with sugar and vanilla extract then add water, vegetable oil and milk. Now add in the sifted dry ingredients gradually without over mixing the batter.

Pour this batter on a baking pan which have been applied with butter and flour (I have used bundt pan), dust off excess flour and bake this cake for 30-45 minutes at 150 to 170 degrees depending on your oven requirement. The cake is done when you insert a skewer and it comes out clean, let the cake cool overnight or at least few hours before pouring the ganache.



Chocolate Ganache Frosting
50ml of cream
200g of dark chocolate
1 tbsp of butter

Melt all dark chocolate and cream over double boiling method, once chocolate is perfectly melted add in butter for a glossy look. Let the ganache cool before pouring over the cake and decorate upon your creativity.

Spicy Chicken Briyani


Ingredients:

(Serves 4)
4 pcs of chicken drumstick
4 hard boiled eggs
2 cups of Basmathi rice (70% cooked)
1 tbsp of coriander powder
1/4 tsp of cumin powder
1/4 tsp of fennel powder
1 tsp of red chilli powder
1/4 tsp of turmeric powder
1/4 tsp of garam masala
2 onions (chopped)
2 tomatoes (chopped)
2 green chillies (slit)
1 tbsp of ginger garlic paste
2 tbsp of cashew nuts
2 tbsp of raisins
A bunch of coriander leaves
1/2 cup of mints (chopped)
1 cinnamon stick
2 star anise
4 cloves
2 cardamom
3 tbsp of ghee
1 cup of water
Salt to taste

In a pan, heat ghee and add cinnamon stick, star anise, cloves, cardamom and stir for a minute then add  chopped onions fry until translucent. Now add in ginger garlic paste, mix well and add chopped tomatoes and cook until tomatoes turn mushy. Then add green chilli, chilli powder, coriander powder, turmeric powder, fennel powder and cumin powder, mix everything together so that the spices incorporates well and add in chicken drumsticks, half a cup of water. Let all this cook on medium flame until the chicken is cooked and the liquid is evaporated.

Now add in boiled eggs, 70% cooked rice to the chicken mixture mix everything well and pour in the balance water, adjust seasoning and cover to cook until rice is fluffy. Mix in coriander and mint leaves to the rice and cover for a couple of minutes so that the flavor will be infused in the rice. Finally add in cashews and raisins that have been fried in ghee to garnish.

Walnut Chocolate Chunks Brownies

Every-time I go shopping for pantry items, I have always wanted to try Pillsbury's ready made brownies mix. Its super easy to make and awesome, fudgy delicious brownies. I have added some chopped walnuts to give perfect brownies, finally my dream came true....hehehe...





Ingredients:

1 pack of brownies mix
1 cup of chopped walnut
75 ml of water
30 ml of oil
1 egg

In a bowl, mix everything together, pour into a 9x9 greased square tin and baked for 20 minutes on a preheated oven at 150 degrees. Once baked let it cool before cutting and serving the brownies. Now our Hazelnut Chocolate Chunks Brownies is ready to be served!

Egg and Sausage Stir Fry


Ingredient:

3 sausages (cut thinly)
2 eggs (beaten)
2 large onion (chopped)
2 garlic pods (chopped)
2 bird eye chilli (chopped)
1 tsp of meat curry powder
2 tbsp of coriander leaves
A pinch of salt
1 tbsp of oil

In a pan heat oil, add in chopped onions, garlic and chilli stir for a minute then add in the sausages and fry the sausages until its slightly browned, now add in meat curry powder and salt stir for a couple of minutes. Finally add in the beaten egg and fry like making scrambled eggs but to smaller pieces just like the above picture. Add in coriander leaves and mix well, now our Egg and Sausage Stir Fry is ready to be served. Best eaten with white rice, bread and roti.

Spicy Tuna Cutlets


Ingredients:

1 can of tuna flakes in water
4 potatoes (boiled and mashed)
1 large onion (chopped fine)
5 bird eye chilli (chopped fine)
1/2 tsp of turmeric powder
1/2 tsp of garam masala powder
1 large egg (beaten and add 2 tbsp of water)
1 tbsp of lemon/lime juice
Salt to taste
Oil to fry

In a bowl add potatoes, tuna flakes (drain out the water), lemon/lime juice, onions, chilli, turmeric powder, garam masala powder, salt and mix everything  until it does not stick to your hands. Leave the mixture to set aside for at least 30 minutes.

Heat oil and maintain on medium flame, roll the tuna mixture into small balls and flatten slightly, keep aside. Dip the prepared cutlets in the egg mixture then fry to golden brown and drain on a kitchen towel. Now our Spicy Tuna Cutlets are ready to be served,best eaten with plain rice and kaara kuzhambu or as snacks dipped in ketchup.

Butter Prawn

My love for Chinese Cuisine, I just can't explain. I love the cuisine because of its quick preparation and does not need long hours of waiting even when you order in a very busy restaurant. I have admired the food since I was a kid, dad used to bring us to Chinese restaurants almost every week, my love for it grew fonder after I have started cooking. Butter Prawn is a dish that have been my all time favorite and must order dish when ever we eat out. It look me so long to get a perfect recipe of this dish, you can find many similar recipes in the net but I have copied this recipe long long ago even before I blog so I don't write down the source of this recipe. My heart felt gratitude to those who have shared this recipe, now let us see how to prepare this easy and delicious dish;


Ingredients:

10 large prawns (cut the antennae)
3 egg yolks (I have used 2 large whole eggs)
2 sprig of curry leaves 
3 bird eye chilli (chopped)
1/4 cup evaporated milk
2 tbsp of vegetable oil
2 tbsp of corn starch
1 tsp of white pepper powder
4 tbsp of butter
1 tsp of sugar
Salt to taste

Marinate prawns with salt and pepper for 10 minutes, before frying add cornstarch. Heat 2 tbsp of butter and 1 tbsp of vegetable oil, let the butter melt and fry prawns until it turns red/pink/peach colour. Do not over cook the prawn, it take a couple of minutes to achieve this. Drain the prawns and keep aside.

In another pan add 1 tbsp butter and oil, pour the whisked eggs and fry until you get tiny pieces of scrambled egg (very tiny pieces like you can see from the above picture). Pour the balance 1tbsp of butter and oil add curry leaves and chopped chilli, then add the evaporated milk when it starts bubbling add prawn, sugar and salt. Quickly stir fry until all the ingredients are well incorporated and serve.

Moist Banana Cake

I have been planning to bake banana cake for a long time but buying it has been very tough as I didn't get the exact type I was looking for. Two days back, I managed to buy some and immediately planned to bake my favourite cake. The most important thing to get a perfect cake is the mashing of banana to a very fine and smooth paste then let it oxidize for at least 30 minutes to get wonderful cake after baking the cake. Mine didn't turn out as expected as I didn't have the patience to wait for it to oxidize perfectly but the cake was so yummy and finished in two days.

Now let's look at how to bake this yummy yummy cake;


Ingredients:

1 cup of mashed bananas (I have added 2 cups)
1/2 cup of vegetable oil
1 and 1/2 cup of plain flour
1 tsp of baking powder
1/2 tsp of baking soda
1 tsp of vanilla extract
1/4 cup of milk
3/4 cup of soft brown sugar
3 large eggs 
A pinch of salt

Sift plain flour, baking soda and baking powder, keep aside.

Beat brown sugar, salt, vegetable oil and eggs until fluffy then add vanilla extract. Now alternately add the dry ingredients with milk. Finally add mashed bananas and fold in to the cake batter.

Pour the batter into a buttered cake pan and bake for 35-45 minutes at 150-180 degrees or until the cake is well baked. 

Let the baked cake cool for at least 2 hours before cutting and serving it. Now our Moist Banana Cake is ready to be served. I prefer eating the cake chilled, do try and let me know how it turned out for you!

Leftover Idli Stir Fried

It is very difficult to throw away leftovers especially when you know the worth of food, so to avoid wasting f I usually prepare very small portion every time I cook. But when it comes to my favourite Idli, I don't mind storing it in fridge for up to two days. Now coming back to today's recipe, I have learnt this from my mom but made some changes by adding sausages to it, mom only add eggs during non-vege days. This is my husband's favourite especially if he wants to eat something simple and quick.

Now let us see how to prepare this quick and yummy dish;


Ingredients;

4 Idlis (cut into small pieces)
2 large eggs beaten
3 sausages (sliced)
1 large onion sliced
2 tbsp of dried shrimp
2 tsp od meat curry powder
3pcs bird eye chilli (sliced)
Salt to taste
2 tbsp of oil

In a pan, heat oil and fry onion then add dried shrimp and sausage fry. Pour the beaten eggs on one side and scramble it not fully cooked, now add chilli stir for a minute then add the idlis. Mix everything evenly then you can add meat curry powder and salt, mix thoroughly so that the salt can be absorbed into idli pieces. Now our Idli Stir Fry is ready to be served. Spicy Crab Curry

My husband's all time favourite have been and will be crab forever, especially if home cooked and spicy. He have ordered through a friend few days back and he brought it home today, the difficult part for cooking crabs will be cleaning it. This time we have got real huge crabs which weighs 1kg per crab, just imagine how tough it would be to clean it, lucky thing for me because they have the claws detached from the crab and half cleaned. I just had to wash and cook it, the taste was awesome and my husband was so happy it tasted so delicious with the thick gravy I cooked.

He said next week she should buy again, I must think of some other style to cook the crab. It is always fun to cook for people who really appreciate our work and effort. Okay now let me bring you to the recipe;


Look at how big the claw is....yummmm!!!

Ingredients:

3 large crabs (cleaned, claws broken)
2 large onions sliced thinly
2 tbsp of ginger garlic paste
2 sprigs of curry leaves
3 tbsp of fish curry masala
3 tsp of chilli powder
1 tsp of turmeric powder
2 large tomatoes sliced
10 pcs of bird eye chilli (for extra heat)
1/2 cup coconut cream
1 tbsp of jaggery
1 egg slightly beaten
1 cinnamon stick
2 star anise
Salt to taste
Oil to fry
Water

In a bowl mix fish curry masala, chilli powder, turmeric powder and water to form masala paste, keep aside.

In a huge pan, heat oil then add cinnamon stick, star anise, curry leaves and onion fry lightly, now add ginger garlic paste fry until the aroma released. Add sliced tomatoes and bird eye chilli, let it turn mushy, now add in the masala paste and let it cook in oil for few minutes.

Then add water to the paste, depending on the amount of gravy needed as per preference then cover and let it cook for 10 minutes. Add salt and jaggery, let the gravy cook until gravy thickened, then add coconut cream mix well.

Now add the cleaned crabs and stir in well so that the crabs will cook and absorb the flavours in the gravy, crabs shouldn't be cooked for very long just wait until its shell turn colour and its ready to be served. I have removed the crabs to a serving platter before adding in the beaten egg to the gravy, adding egg will make the gravy thicker and yummy.


Now our Spicy Crab Curry is ready to be served.

Hailing from different walk of life and countries is something everyone should acknowledge off, now I got to know Sutapa from Tips for Delicious and Healthy Cooking sometime ago while we visit each others blog. She always comes up with unique and healthy dishes she have tried, I love her collections. Welcome New Year with my delicious Chocolate coffee Cake.



Winter means season for cakes, cookies and hot cup of coffee. In this chocolate coffee cake I try to combine two most hot favorite flavors of the season. I am sure you all will like this yummy cake.


Ingredients:

2 1/2 cup flour
1/2 cup sugar
2 tsp baking powder
3/4  cup butter milk
3 eggs
1 /2 cup prunes ( or any dry fruits of your choice)
1 1/8 cup dark cooking chocolates chopped
375 g unsalted butter chopped
1 cup castor sugar
1 freshly brewed strong coffee
 Melted butter for greasing
Preheat oven 160 degree C. Brush your cake pan with the melted butter to grease. Line the base of the with a parchment paper for baking.

Mix the dry ingredients together well. Lightly beat 3 eggs. Add eggs to dry ingredients. Add butter milk to the dry ingredients. Mix well. With the help of a hand beater mix the batter well in such a way so that no lumps are formed. Set the batter aside. 

Now in a medium sauce pan take butter, dark chocolate, castor sugar and coffee. Heat on a medium temperature, let the butter and chocolate melt and well combined. Now add this mixture slowly to the previous batter. Mix well with the beater so that it is well mixed and no lumps are formed.  

When well combined then add prunes or whatever dry fruits you want to use. Mix well. Now pour the mixture in the cake pan and bake in a preheated oven for a hour or until a skewer inserted came out clean. Let it stand for 10 to 15 minutes before turning into wire rack to cool. You can top it with any glaze but I want to keep the calorie count low so just top it with generous amount of grated chocolate and cherry.

Strawberry Swirl Cake

Christmas is just around the corner, I'm so excited about it. I'm planning for a small celebration with my family and as another step to Christmas I baked a wonderful and delicious cake, Strawberry Swirl Cake. I don't want to go on blabbering here let me take you to the recipe;


Ingredients:
1 cup of all purpose flour
1/2 cup of castor sugar
1/2 cup of soft butter
1/2 tsp of baking powder
1/2 tsp of baking soda
1 tsp of rose essence
1/4 cup of evaporated milk
1/4 cup of strawberry filling
2 drops of red coloring (optional)
2 large eggs

In a mixing bowl, whisk egg, sugar and butter until fluffy. Now add in rose essence, red coloring and evaporated milk. Now add baking soda, baking powder and all purpose flour and mix until everything are well incorporated. 

Pour the mixture in a baking tray depending on your preference and finally add the strawberry filling on top of the cake mixture, using a stick swirl the filling in the cake mixture to get a perfect swirl once baked. Then bake the cake at 150 degrees for 40 minutes.

Once the cake is perfectly baked let it cool before  you unmould the cake and cut into slices. Now our Strawberry Swirl Cake is ready to be served.

Strawberry Milk Toast

Thinking about what to prepare for breakfast always gives me a tough time, I need something healthy and easy to make before I leave to work. I love omelette toast very much but I don't like it sweet either, when I opened my fridge door I saw Strawberry Milk that my husband bought then got an idea. While thinking what else to add I thought cinnamon powder and strawberry milk will get along well, so I decided to make Strawberry Milk Toast with cheese slices.


This is a very easy to do recipe for any time of the day, even kids would definitely love it. Now let me bring you to the recipe and how I made this.

Ingredients;
4 sliced of bread
2 eggs (beaten)
1 tsp of butter
5 tbsp of strawberry milk
A pinch of cinnamon powder
A pinch of salt


Lightly beat the eggs

Add in the strawberry milk

Add butter, cinnamon powder and salt

Dip one slice of bread to the egg mixture

Soak both the side of the bread in the egg mixture

Now toast the bread on a hot pan

I prefer both the sides of the bread to brown well

I have added a slice of cheese on the bread slice and top with 
another hot slice making it a sandwich

Now our Strawberry Milk Toast is ready to be served, you can add sugar 
if you are serving for kiddos, they would definitely love it.

Christmas Cake

I love Christmas my whole life, for me the best festival in the world would be Christmas. Fun filled, joyous and full of love is how I would describe this festival. Even though I don't celebrate Christmas but the month December always bring lots of excitement and joy for me, be it the movies aired on television, the cakes and cookies, decorations and gifts.




This year I have planned to make a Christmas cake for celebration at home so my mixed dried fruits  have been soaking in brandy for the past 3 days, I know usually minimum 6 weeks is needed to get the best out of soaking this dried fruits. But since this is the first time I'm making this cake so I don't have that much of patience to wait for 6 weeks.

Okay now let's check how I made this cake;

Ingredients:

500g of dried fruit (assorted)
2 cups of plain flour
1 cup of fresh orange juice
1 cup of soft brown sugar
3 tbsp of treacle/ honey
1 tbsp of orange zest
1 tsp of nutmeg powder
1 tsp of cinnamon powder
1 tsp of mixed spice powder
1 tsp of baking soda
1/2 cup of brandy
150 g of butter
A pinch of salt
2 eggs


Boil dried fruits, butter, brown sugar, orange juice, treacle, salt on a low flame until it bubbles, 
then add baking soda at this moment more smaller bubbles will be formed, 
turn off the flame and let it completely cool

In another bowl, sift plain flour, nutmeg powder, mixed spice powder, cinnamon powder and keep aside.

Once the fruit mixture completely cool, add eggs and mix, finally add the dry ingredients to this mixture and fold in  orange zest well, no need to whisk or beat for very long. 

Grease a baking tray and pour in the cake mixture and bake at 150 degrees for 30-45 minutes depending on your own oven. Once baked let the cake completely cool, leave in refrigerator for at least 2 days before cutting and serving the cake.


But I couldn't wait for another 3 days to post this picture so had to cut a small piece out to show to you. For the best taste and moist you can apply brandy on the top layer of the cake for 3 days.

Now our Christmas Cake is ready to be served. Do try and let me know it was!
