Today have been a very busy day for me, didn't have much time to write on my blog. Chinese cuisine has always been my all time favorite and I'm sure many of you all love it too, I'm sharing with you all a very simple dish " Plum Chicken Stir Fry".
Maybe some of you have tried this dish before, for those of you who have been looking for the recipe come take a look how to cook this.
1/4kg chicken cubed (I have used chicken keel)
1 capsicum cubed
1 red chili sliced
1 large onion (cut into wedges)
3 cloves of garlic diced
2 tbsp corn starch
3 tbsp plum sauce
Salt to taste
Oil to fry
Marinate chicken with corn starch, I do not add salt at this point as my family members are very particular with salt anything exceeding the normal amount will go to bin. Leave the chicken for 5 minutes and deep fry it in shallow oil and fry until its golden, keep a side the fried chicken.
In a wok, pour oil and add garlic, saute a while careful not to burn it. Now add onion stir for a couple of minutes this will release the juices from the onion then add in the capsicum and red chili. Do not over cook the above ingredients, immediately add fried chicken stir for a minute, now add the plum sauce. Make sure stir it well so that the chicken pieces will be completely coated with the plum sauce and add salt to taste.
If u prefer more sauce, you could add some water to the mixture above and thicken it with corn starch slurry. Now our "Plum Chicken Stir Fry" is ready best served with white rice.
