Today our dinner is Simple Fried Rice, this dish is very suitable for children as its not spicy. Preparation and cooking time is less than 15 minutes, one thing I should tell you all its always advisable to use cold rice as hot cooked rice will be soggy when fried.
2 cups of cooked rice
3 eggs beaten
1 handful of fried anchovies
1 large onion sliced
5 pcs bird eye chili(slit lengthwise)
2 tsp light soy sauce
In a wok, pour oil add onion and saute for a minute. Then add bird eye chili and stir a while, now add beaten eggs and scramble it.
Add cooked rice and mix well with all the ingredients above, add fried anchovies then pour light soy sauce and stir well. Taste and add more soy sauce if needed, you can even substitute light soy sauce with fish sauce or salt.
