Quail Egg Briyani

Hello everyone, I love Sundays because this is the only day my husband could rest at home and most importantly I can prepare 3 to 4 meal a day for him, breakfast, lunch, tea break and dinner. For the past few days he have been craving for briyani and quail eggs, so I thought maybe I could combine both and make Quail Egg Briyani.


Looks tasty right? It's a very simple dish to make especially if you use pressure cooker, if you don't have a pressure cooker  just use a normal rice cooker. Let's check how I cooked this.

Ingredients:

2 cups Basmathi rice (soaked for 30mins and drained)
15 quail eggs (boiled and peeled)
3 large onions sliced
2 tomato cubed
1 tsp red chili powder
1/4 tsp turmeric powder
1/2 tsp garam masala powder
2 tbsp ghee
1 bay leaf
3 cloves
1 cinnamon
2 cardamom
4 green chili slit lengthwise
1 tbsp ginger garlic paste
3 tbsp yogurt
Few drops of yellow coloring
1/4 cup of raisins
Handful of coriander leaves
3 cups of water
Salt to taste



In a pressure cooker, pour ghee and add cinnamon, cardamom, cloves, bay leaf, onion and green chili and stir for a minute. Now add cubed tomato and cook until its soft, then add chili powder, turmeric powder and garam masala powder until fragrant.Then add yogurt, lemon juice,raisins and most importantly salt to taste. Stir every now and then to avoid being burnt.

Now add the quail eggs and drained rice and mix well, be careful not to break the rice nor the eggs.   Add water and close the lid of cooker and let it cook for 5 minutes. After 5 minutes, add coriander and cook for another 5 minutes, at this point add some yellow coloring on the rice and keep the lid of cooker closed until ready to serve. Avoid stirring with ladle or spoon because you will break the rice, always stir with a chopstick to get fluffy long grained rice.

Now my quail eggs briyani is ready to serve. Serve with onion and carrot raita or any other side dishes of your wish.
