This is a very simple recipe my mom have taught me, let's us look at the recipe.
Ingredients:
1 cup coconut milk
1 tomato chopped
1 onion chopped
2 garlic sliced
2 green chili
1 sprig curry leaf
1 tsp fenugreek seed
1/2 tsp turmeric powder
1/2 tsp cumin powder
1/2 cup of water
A pinch of salt
1 tsp oil
In a pan, pour oil add fenugreek seed, onion, curry leaves, green chili, garlic and saute for a minute. Now add in chopped tomato and let it cook until it turn mushy then pour water, add in turmeric powder, cumin powder, salt and let it boil.
Once the water boiled, add in coconut milk and turn of the flame, stir the gravy well to incorporate coconut milk with boiling water. Do not heat the gravy after adding coconut milk because it will curdle and tastes like oil.
Now our Sothy is ready to be served, do try and let me know how it turned out.
Simply love this sothy.
